Simple Chocolate Truffles with Tidal Salt

This lovely little recipe is 5 ingredients: simple, low cost and you will get WAYYYY more points for making your special someone chocolates by hand!  Just sayin....  (you could even make these in a microwave if you wanted.)

Simple Chocolate Truffles

8oz chocolate chips of your choosing (dark, semi-sweet, or milk.... we recommend semi-sweet)

1/2 cup heavy whipping cream

1 teaspoon flavour (optional - this can be vanilla, amaretto, rum, red wine, coffee, whatever you like!)

Dutch process cocoa powder 

Tidal Salt (obviously)

Heat the heavy cream and flavour (we used vanilla) in a small pot over medium high head until just about to boil. You can also do this in 45 second intervals in the microwave. Remove from heat and add chocolate chips. Stir until smooth. 

Place the chocolate mixture in the fridge until set. About a half hour. 

Now things will get a little messy.  Spoon out about 1/2 teaspoon sized amounts of the ganache (that's your chocolate mixture) and put them on a plate. The don't need to be round yet, just spread them out in a single layer. Pop in the freezer for 10 minutes to set up firmer. 

Roll the ganache chunks in a bit of cocoa powder and roll them around in your hands until round - reroll in cocoa as needed so that you are left with a matte and non-sticky finish to your truffle. 

Reset them in the fridge for a couple minutes anytime they start getting too gooey. 

Now, put a pinch of your salt of choice on a plate and tap the top of each truffle in the salt. 

Don't Feel like making chocolates, but want a salty treat - Sprinkle any of these salt flavours on some chocolate dipped strawberries and enjoy!!
